Quince Ricotta Ofenschlupfer (Bread Pudding)
A bunch of leftover-sliced baguette, a bit of ricotta and a bowl of quince turned into this magic yesterday. This is a cook-with-what-you-have Ofenschlupfer, a German variation of bread pudding that I grew up eating in the fall made with apples. But quince! Quince, with all its tart, fragrant, wonder takes this to another level.
I tossed this together without referencing any Ofenschlupfer recipes but the basic combination of egg, milk, sugar, spices, bread, and fruit is pretty forgiving. But do be on the look-out for quince!

Pears are the state of Oregon's official fruit and Oregon is the second largest producer of pears in the United States. There are many varieties that thrive here and you'll likely see red and yellow Bartlett, red and yellow Anjou, Comice, Bosc and many more.
A perfectly ripe pear really needs no recipe, however they do stand up well to baking and poaching, and are delicious in salads and roasted alongside meats.
Pears also happen to be loaded with fiber, vitamin C and potassium.
