About: Orach

Orach, also known as mountain spinach, is a leafy vegetable that is part of the amaranth family. The most commonly grown variety is red orach which is pictured, but there are green and white varieties as well (the white variety actually has yellow leaves). Orach is rich in vitamins and minerals, and the health-boosting anthocyanin that give some varieties their deep red or purple colors are known to have anti-inflammatory and anti-carcinogenic effects.   It is often compared to spinach and chard in flavor, and can be prepared similarly to those greens. Younger orach leaves can be eaten raw, but older, and often tougher, leaves are best cooked. Some note that orach has a slightly salty flavor, so always taste as you go when cooking.
